The yacón is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots. It has become popular in Japan and the Philippines, where the roots and leaves of yacon are widely used for managing diabetes.
Yacon is a superfood well known for being a natural prebiotic (stimulating good bacteria in the digestive system and boosting the body's immune system) and is a natural low-calorie sweetener for diabetics and weight-watchers. It is delicious eaten raw, it is sweet, crisp and refreshing hence one of the common names being Peruvian ground apple. We can use it in salads chopped or grated, it's also delicious for juicing.
